The last day of Ramadan is a big Holiday celebration. A great eggplant dish to celebrate the new moon.

Ingredients
  

  • 3 ounce(s) eggplants, washed
  • 1 ounce(s) tomatoes, washed, peeled and finely chopped
  • 1 ounce(s) green bell peppers, washed and finely chopped
  • 1/2 cup(s) onions, peeled, washed and finely chopped
  • 2 tablespoon(s) parsley, washed and chopped or as much as desired
  • 1 mint leaves, washed and chopped or as much as desired
  • 1/2 clove of garlic, peeled, washed and chopped
  • 1/8 teaspoon(s) salt
  • 1 lemon, juice
  • 1/2 cup(s) olive oil

Instructions
 

  • Grill the eggplant until done.
  • Chop it into small pieces and mix it with the remaining ingredients.
  • Top with a dash of olive oil.
  • Serve immediately.
