  • 1 tablespoon(s) butter, unsalted
  • 2 medium yellow summer squash, sliced
  • 1 zucchini, sliced
  • 1 medium yellow onion, diced
  • 3 medium fresh tomatoes, diced
  • 1/2 cup(s) frozen corn
  • 1 clove garlic, minced
  • 1/2 teaspoon(s) oregano
  • 1/2 teaspoon(s) basil
  • 1/4 teaspoon(s) freshly ground black pepper

Instructions

 

  • In a large pan over medium heat, melt butter.
  • Add squash, zucchini and onion.
  • Saute 3 to 4 minutes.
  • Add tomatoes, corn, garlic and seasonings and cook another 2 to 3 minutes.
  • Serve immediately.
  • Ready in 20 min.
