Ingredients
  

  • 2 cup(s) lentils, rinsed and drained
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoon(s) olive oil
  • 64 floz water or no-salt-added vegetable broth
  • 1 medium potato, diced
  • 1/2 teaspoon(s) oregano
  • 2 tablespoon(s) fresh lemon juice
  • 1 dash(es) freshly ground black pepper to taste

Instructions
 

  • Place onion, garlic and oil in medium soup pot over medium heat; saute until soft.
  • Add all ingredients except lemon juice and pepper.
  • Simmer 45 to 60 minutes or until the lentils are soft.
  • Stir in lemon juice and pepper and serve immediately.
  • Ready in 1 hour.
