
Heart Healthy Lentil & Lemon
Soup is good food, especially when it's this delicious lemon and lentil soup. Loaded with great-tasting ingredients, it's bursting with flavor. Prepare to have your taste buds fall in love with lentils.
Ingredients
- 2 cup(s) lentils, rinsed and drained
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoon(s) olive oil
- 64 floz water or no-salt-added vegetable broth
- 1 medium potato, diced
- 1/2 teaspoon(s) oregano
- 2 tablespoon(s) fresh lemon juice
- 1 dash(es) freshly ground black pepper to taste
Instructions
- Place onion, garlic and oil in medium soup pot over medium heat; saute until soft.
- Add all ingredients except lemon juice and pepper.
- Simmer 45 to 60 minutes or until the lentils are soft.
- Stir in lemon juice and pepper and serve immediately.
- Ready in 1 hour.
