
Heart-Healthy Garlicky Soup
Garlic lovers -- you'll be in hog heaven when you sample this gourmet soup. It's a spoonful of goodness that's sure to keep the vampires away.
Ingredients
- 2 tablespoon(s) unsalted butter
- 3 tablespoon(s) olive oil
- 3 yellow onions, peeled, thinly sliced
- 4 garlic cloves, separated, smashed, peeled, finely chopped, about 1/2 cup
- 4 teaspoon(s) dry powdered sage
- 2 teaspoon(s) sugar
- 2 floz port or red wine
- 5 cup(s) salt-free canned or homemade chicken stock
Instructions
- Warm butter and oil in a large pot over medium heat.
- Add onions and cook, stirring occasionally, until golden brown (15 to 20 minutes).
- Reduce heat, add garlic, sage and sugar and continue to cook on medium-low heat, stirring, until garlic softens (5 to 8 minutes).
- Add port.
- Increase heat to high and cook for 3 minutes, stirring constantly to deglaze pan, scraping up the flavorful bits.
- Add chicken stock.
- Bring to a boil, reduce heat, cover and simmer 10 more minutes.
- Season to taste with salt and freshly ground black pepper.
- Ready in 50 min.
