Healthy Tofu Salad Dressing
There's nothing fishy about this terrific tofu salad dressing. Dress up your favorite greens with this anchovy-based dressing that packs a flavorful punch.
Ingredients
- 33/100 cup(s) tofu
- 2 tablespoon(s) lemon juice
- 1 1/2 teaspoon(s) dijon mustard
- 1 garlic clove, minced
- 17/100 ounce(s) anchovies
- 1/4 teaspoon(s) salt
- 2 tablespoon(s) Parmesan cheese, grated
- 1 tablespoon(s) olive oil
- 3/50 teaspoon(s) sugars
- 3/50 teaspoon(s) pepper
Instructions
- In small saucepan of simmering water, poach tofu for 2 minutes; drain, chop coarsely and let cool.
- In blender, blend lemon juice, mustard, garlic, anchovy, salt, sugar and pepper.
- With blender running, gradually add tofu, cheese and oil.
- Transfer to small jar and refrigerate covered, for up to 2 days.
- Ready in 15 min.
