Healthy Swedish Meatballs

Behold the marvelous meatball! The secret to making Swedish meatballs is good meat- finely ground, finely chopped onions and thorough mixing of ingredients.

Ingredients

  

  • 1 large onion, very finely chopped
  • 1/2 floz water
  • 24 ounce(s) lean ground beef
  • 8 ounce(s) ground pork
  • 1/4 teaspoon(s) ground allspice
  • 1/3 teaspoon(s) ground cloves
  • 1/2 teaspoon(s) salt
  • 2 cup(s) whole wheat bread crumbs
  • 3/16 cup(s) flour
  • 2 cup(s) skim milk
  • 4 1/2 teaspoon(s) low-sodium beef bouillon granules

Instructions

 

  • In a covered saucepan, heat onion with water until onion pieces are soft.
  • Mix onion, beef, pork, allspice, cloves, salt and bread crumbs thoroughly.
  • Form into 30 medium balls.
  • In skillet (or in oven at 350 degrees), brown meatballs.
  • Remove balls to casserole dish.
  • Make gravy by mixing together flour, milk, bouillon granules and drippings in the same skillet.
  • Cook until thickened.
  • Pour gravy over meatballs.
  • Bake at 350 degrees or simmer until ready.
