
Healthy Breakfast Cookie and Bar
Oat what a feeling! When you are looking for a bran new breakfast alternative, give this homemade offering a try. Prepared with a smattering of healthy ingredients, you can serve this delicious recipe as a cookie or a bar. One thing is for sure -- it's definitely crunch time.
Ingredients
- 2 cup(s) bran flakes , crushed (or substitute multigrain flakes)
- 2 cup(s) oatmeal
- 2 tablespoon(s) wheat germ
- 1 tablespoon(s) 1.5
- 1/2 cup(s) plain non-fat yogurt
- 1 cup(s) unsweetened applesauce
- 1 teaspoon(s) vanilla
- 1/3 cup(s) honey
- 1 egg, beaten
- 1/2 cup(s) skim milk powder
- 1 teaspoon(s) baking soda
- 1 teaspoon(s) baking powder
- 1/2 cup(s) raisins
Instructions
- Preheat oven to 350 degrees.
- Crush cereal, and place in a medium-sized mixing bowl.
- Add oatmeal, wheat germ, and cinnamon.
- Set aside.
- In a medium mixing bowl, combine yogurt, applesauce, vanilla, honey, beaten egg, and skim milk powder: mix well to combine.
- Add baking soda and baking powder to the yogurt mixture.
- Mix well.
- Gradually add the cereal and oatmeal mixture to the yogurt mixture and stir well.
- Add raisins and mix to combine.
- Scoop a heaping tbsp of the batter and roll it into a ball.
- Place onto a non-stick cookie sheet, or lined with baking parchment, and lightly flatten.
- Bake at 350 degrees for 15-18 minutes.
- Makes 24 cookies.
