
Healthy Breakfast Cookie and Bar
Oat what a feeling! When you are looking for a bran new breakfast alternative, give this homemade offering a try. Prepared with a smattering of healthy ingredients, you can serve this delicious recipe as a cookie or a bar. One thing is for sure — it’s definitely crunch time.
Ingredients
- 2 cup(s) bran flakes , crushed (or substitute multigrain flakes)
- 2 cup(s) oatmeal
- 2 tablespoon(s) wheat germ
- 1 tablespoon(s) 1.5
- 1/2 cup(s) plain non-fat yogurt
- 1 cup(s) unsweetened applesauce
- 1 teaspoon(s) vanilla
- 1/3 cup(s) honey
- 1 egg, beaten
- 1/2 cup(s) skim milk powder
- 1 teaspoon(s) baking soda
- 1 teaspoon(s) baking powder
- 1/2 cup(s) raisins
Instructions

Preheat oven to 350 degrees.

Crush cereal, and place in a medium-sized mixing bowl.

Add oatmeal, wheat germ, and cinnamon.

Set aside.

In a medium mixing bowl, combine yogurt, applesauce, vanilla, honey, beaten egg, and skim milk powder: mix well to combine.

Add baking soda and baking powder to the yogurt mixture.

Mix well.

Gradually add the cereal and oatmeal mixture to the yogurt mixture and stir well.

Add raisins and mix to combine.

Scoop a heaping tbsp of the batter and roll it into a ball.

Place onto a non-stick cookie sheet, or lined with baking parchment, and lightly flatten.

Bake at 350 degrees for 15-18 minutes.
