
Hawaiian Cheese Logs
Hints of citrus and macademia nuts give a Pacific-inspired twist on a traditional cheese log. These logs can be frozen and should be prepared in advance to give the flavors a change to mingle before serving.
Ingredients
- 7 ounce(s) macadamia nuts
- 16 ounce(s) cream cheese, softened
- 8 ounce(s) sharp Cheddar cheese, finely grated
- 1 tablespoon(s) orange rind, grated
- 3 ounce(s) Grand Marnier
Instructions

Chop macadamia nuts in a blender.

Reserve 3 tbsp and set aside.

Place remaining chopped nuts in a medium-size bowl and add the cheeses.

Blend.

Add the orange rind and Grand Marnier.

Blend well.

Divide mixture in half and spoon each into a rectangle of plastic wrap.

Fold wrap around mixture and form into logs.

Refrigerate until firm.

When ready to serve, remove plastic and sprinkle with remaining nuts.

This can be frozen and gets tastier by the day.

Makes two cheese logs, about one lb each.
