Hawaiian Cheese Logs

Hints of citrus and macademia nuts give a Pacific-inspired twist on a traditional cheese log. These logs can be frozen and should be prepared in advance to give the flavors a change to mingle before serving.

Ingredients

  

  • 7 ounce(s) macadamia nuts
  • 16 ounce(s) cream cheese, softened
  • 8 ounce(s) sharp Cheddar cheese, finely grated
  • 1 tablespoon(s) orange rind, grated
  • 3 ounce(s) Grand Marnier

Instructions

 

  • Chop macadamia nuts in a blender.
  • Reserve 3 tbsp and set aside.
  • Place remaining chopped nuts in a medium-size bowl and add the cheeses.
  • Blend.
  • Add the orange rind and Grand Marnier.
  • Blend well.
  • Divide mixture in half and spoon each into a rectangle of plastic wrap.
  • Fold wrap around mixture and form into logs.
  • Refrigerate until firm.
  • When ready to serve, remove plastic and sprinkle with remaining nuts.
  • This can be frozen and gets tastier by the day.
  • Makes two cheese logs, about one lb each.
