Hash Browns

A classic diner breakfast doesn’t have to be dripping with fat and carbs. These zucchini-infused pancakes will satisfy your hankering for hash, stat.

Ingredients

  

  • 3 teaspoon(s) bacon drippings
  • 1/2 small onion, diced
  • 1 cup(s) grated zucchini
  • 1/4 teaspoon(s) dried thyme
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste
  • 1 dash(es) paprika, to taste (optional)

Instructions

 

  • Saute onion in the bacon fat until soft, then add the zucchini.
  • Cook over medium heat until crisp outside and soft inside, about 8 minutes.
  • Add seasonings near end of cooking time.
  • Sprinkle with paprika just before serving.
