
Grilled Mahi-Mahi
Want a seafood dish your guests will flip over? This dolphin dish is it. The grilled mahi mahi is prepared with a host of flavorful ingredients that will have it drowning in goodness.
Ingredients
- 3/4 cup(s) olive oil
- 4 tablespoon(s) red wine vinegar
- 33/100 tablespoon(s) fresh chopped dill
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1 cucumber, sliced
- 1/4 cup(s) red onion, diced
- 1/4 cup(s) diced tomatoes
- 1/4 cup(s) chicken stock
- 1 cup(s) tomato juice or bloody Mary mix
- 1 6- to 8-oz., mahi fillet
- 2 tablespoon(s) whole butter, softened
Instructions

Mix first four ingredients and pour over vegetables; toss gently.

Combine stock, tomato juice and salt and pepper and simmer over medium heat until reduced by half.

Grill mahi until done; brush with 1 oz butter.

Place mahi in bowl.

Ladle over it tomato bouillon and top with relish.
