  • 4 flour tortillas
  • 2 eggs
  • 1 large tomato
  • 8 ounce(s) ground sausage
  • 1 large potato, peeled and grated
  • 1 cup(s) grated Monterey Jack
  • 4 tablespoon(s) salsa
  • 1 dash(es) salt
  • 1 dash(es) pepper

Instructions
 

  • Cook sausage in a frying pan.
  • Add potatoes, and cook until brown.
  • Drain fat.
  • Warm tortillas.
  • Scramble eggs.
  • Divide all ingredients evenly among flour tortillas.
  • Season to taste with salsa or salt and pepper.
  • Fold tortillas and serve immediately.
