Great Brunch Burritos
It's not breakfast. It's not lunch. But it is brunch. This recipe is perfect for that perfect mid-day meal that offers the best of both worlds in one great-tasting dish.
Ingredients
- 4 flour tortillas
- 2 eggs
- 1 large tomato
- 8 ounce(s) ground sausage
- 1 large potato, peeled and grated
- 1 cup(s) grated Monterey Jack
- 4 tablespoon(s) salsa
- 1 dash(es) salt
- 1 dash(es) pepper
Instructions
- Cook sausage in a frying pan.
- Add potatoes, and cook until brown.
- Drain fat.
- Warm tortillas.
- Scramble eggs.
- Divide all ingredients evenly among flour tortillas.
- Season to taste with salsa or salt and pepper.
- Fold tortillas and serve immediately.
