
Grain and Go Pancakes
Don't take these palatable pancakes with a grain of salt -- take them with the whole grain. You won't feel guilty indulging in this delicious a.m. dish that is even better when topped with a handful of fresh fruit. They're sure to become your favorite kind of flapjacks.
Ingredients
- 1 cup(s) whole wheat flour
- 3/4 cup(s) all-purpose flour
- 333/1000 cup(s) cornmeal (preferably stone-ground)
- 1/4 cup(s) rolled oats
- 2 tablespoon(s) sugar
- 2 teaspoon(s) baking powder
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) baking soda
- 1/2 teaspoon(s) ground cinnamon
- 1 dash(es) freshly ground nutmeg
- 1 3/4 cup(s) milk
- 4 tablespoon(s) butter, melted
- 1/4 cup(s) honey
- 3 large eggs
Instructions
- Combine the dry ingredients (first 10 ingredients) in one bowl and the wet ingredients (last 4 ingredients) in another; pour the wet ingredients over the dry ingredients and mix until just combined.
- Spoon 1/4 batter per pancake onto a greased, preheated griddle or skillet and cook until bubbles cover the surface and most have popped; turn and cook until lightly browned.
