Ingredients

  

  • 2 tablespoon(s) olive oil
  • 1 onions, chopped
  • 1 cup(s) diced carrots
  • 1 cup(s) chopped celery with leaves
  • 3 cup(s) crushed garlic cloves
  • 8 cup(s) fat-free, reduced sodium chicken broth
  • 2 cup(s) dried yellow lentils
  • 4 teaspoon(s) ground cumin
  • 2 bay leaves
  • 2 tablespoon(s) tomato paste
  • 1 cup(s) chopped parsley
  • 2 tablespoon(s) lemon juice
  • 1 (14 1/2 oz) can diced tomatoes

Instructions

 

  • In a large pot, heat oil over medium heat.
  • Saute onions, carrots, celery and garlic until soft, about 5 minutes.
  • Add broth, lentils, cumin, bay leaves and paste.
  • Bring to a boil.
  • Reduce heat; simmer until lentils are soft, 30 to 40 minutes.
  • Add tomatoes during the last 10 minutes.
  • Add parsley, lemon juice, simmer 2 minutes.
  • If using dried parsley, put in sooner.
  • Serve in bowls.
