Garlic Mussels

Ingredients
- 10 mussels
- 1 tablespoon(s) clarified butter
- 2 teaspoon(s) minced garlic
- 33/50 tablespoon(s) shallots, minced
- 1/2 teaspoon(s) Old Bay Seasoning
- 1/2 cup(s) Roma tomatoes, diced
- 1/4 cup(s) scallions, diced
- 2 cup(s) fresh spinach
- 4 floz white wine
- 1/2 cup(s) chicken broth
- 1/2 cup(s) whole butter
Instructions
- Pour butter in a large hot saute pan.
- Add garlic and shallots and cook 1-2 minutes.
- Add mussels and Old Bay and stir.
- Add tomatoes and scallions, while continuing to stir.
- Deglaze pan with wine and add spinach.
- Add a touch of broth and mound with butter.
- Rinse mussels under cold water and remove beards.
- All mussels should be closed or at least close when tapped.
