
Fine Lentil Soup
Cheap and healthy! This great lentil soup recipe uses a lot of spices to kick the flavor up a notch. Get ready to get your soup on and slurp on some warm goodness.
Ingredients
- 1 teaspoon(s) vegetable oil
- 1 onion, diced
- 1 carrot sliced
- 4 cup(s) vegetable broth
- 1 cup(s) dry lentils
- 1/4 teaspoon(s) pepper
- 1/4 teaspoon(s) dried thyme
- 1/4 teaspoon(s) bay leaves (2 bay leaves)
- 1 dash(es) salt
- 1 tablespoon(s) lemon juice
Instructions

In a large pot, saute the onions and carrot in the vegetable oil for 3-5 minutes until onions turn clear.

Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.

Reduce heat to a simmer.

Cover and cook until lentils are soft, about 45 minutes.

Remove bay leaves before serving.

Ready in 1 hour.
