Fine Lentil Soup

Ingredients

  

  • 1 teaspoon(s) vegetable oil
  • 1 onion, diced
  • 1 carrot sliced
  • 4 cup(s) vegetable broth
  • 1 cup(s) dry lentils
  • 1/4 teaspoon(s) pepper
  • 1/4 teaspoon(s) dried thyme
  • 1/4 teaspoon(s) bay leaves (2 bay leaves)
  • 1 dash(es) salt
  • 1 tablespoon(s) lemon juice

Instructions

 

  • In a large pot, saute the onions and carrot in the vegetable oil for 3-5 minutes until onions turn clear.
  • Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.
  • Reduce heat to a simmer.
  • Cover and cook until lentils are soft, about 45 minutes.
  • Remove bay leaves before serving.
  • Ready in 1 hour.
