Ingredients

  

  • 2 cup(s) amaranth grain, uncooked
  • 1 cup(s) dried cranberries
  • 1/2 cup(s) chopped almonds
  • 1/2 cup(s) pumpkin seeds, unsalted
  • 1 cup(s) all
  • 1/4 cup(s) flour, whole wheat
  • 2 teaspoon(s) ground cinnamon
  • 1 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1/2 cup(s) cooking oil
  • 67/100 cup(s) sugars, brown
  • 1 cup(s) white large eggs
  • 1 cup(s) applesauce cup, unsweetened
  • 2 teaspoon(s) vanilla extract

Instructions

 

  • Preheat oven to 350 degrees.
  • Lightly grease a 9″ x 13″ baking pan.
  • In a medium bowl, combine the cereal, cranberries, almonds, pumpkin seeds, flours, cinnamon, baking soda and salt.
  • Stir to mix thoroughly.
  • In a separate large bowl, whisk together the oil, brown sugar and egg until blended.
  • Stir in the applesauce and vanilla.
  • Add the dry ingredients, stirring just until blended.
  • Spread the batter in the pan and bake for about 30- 35 minutes or until golden brown and tester inserted in centre comes out clean.
  • Let cool until lukewarm on a wire rack before cutting into bars.
