Eggplant Bisque with Curry

Want some curry in a hurry? This excellent eggplant bisque can be prepared in under 20 minutes, but has a taste like you’ve been slaving over a hot stove all day long.

Ingredients

  

  • 1 onion
  • 33/100 tablespoon(s) grated fresh ginger
  • 2 tomatoes, chopped
  • 1 eggplant, peeled and cut into 1-inch pieces
  • 96 teaspoon(s) chicken bouillon
  • 4 tablespoon(s) chutney
  • 1 tablespoon(s) chives (to sprinkle on top)

Instructions

 

  • Saute onion.
  • Add onion and remaining ingredients, except chives, into a large saucepan and cook for 20 minutes.
  • Puree in blender.
  • Serve either hot or cold.
  • Sprinkle with chives.
  • Ready in 40 min.
