
Eggplant Bisque with Curry
Want some curry in a hurry? This excellent eggplant bisque can be prepared in under 20 minutes, but has a taste like you’ve been slaving over a hot stove all day long.
Ingredients
- 1 onion
- 33/100 tablespoon(s) grated fresh ginger
- 2 tomatoes, chopped
- 1 eggplant, peeled and cut into 1-inch pieces
- 96 teaspoon(s) chicken bouillon
- 4 tablespoon(s) chutney
- 1 tablespoon(s) chives (to sprinkle on top)
Instructions

Saute onion.

Add onion and remaining ingredients, except chives, into a large saucepan and cook for 20 minutes.

Puree in blender.

Serve either hot or cold.

Sprinkle with chives.

Ready in 40 min.
