Easy Tortellini Soup with Vegetables

Ingredients
  

  • 1 tablespoon(s) olive oil
  • 1 small red onion, diced
  • 1 zucchini, diced
  • 1 tablespoon(s) garlic, minced
  • 28 ounce(s) can of crushed tomatoes
  • 3 1/2 cup(s) chicken broth
  • 3 teaspoon(s) white sugar
  • 1 tablespoon(s) italian seasoning
  • 2 floz red wine
  • 4/25 teaspoon(s) hot pepper sauce
  • 11 ounce(s) can of white corn, undrained
  • 4 tablespoon(s) freshly grated Parmesan cheese
  • 1 cup(s) cheese tortellini

Instructions
 

  • In a large pot over medium heat, cook onion, zucchini and garlic in oil for three minutes, until onion is transparent.
  • Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.
  • Reduce heat to low and add corn and Parmesan.
  • Simmer 30 minutes.
  • Add tortellini and simmer for 10 minutes, until pasta is tender.
