Easy Tortellini Soup with Vegetables
This tasty, hearty soup has the tingle of a dash of hot pepper sauce, to warm up your body. The blend of vegetables makes it a healthy meal for the whole family.
Ingredients
- 1 tablespoon(s) olive oil
- 1 small red onion, diced
- 1 zucchini, diced
- 1 tablespoon(s) garlic, minced
- 28 ounce(s) can of crushed tomatoes
- 3 1/2 cup(s) chicken broth
- 3 teaspoon(s) white sugar
- 1 tablespoon(s) italian seasoning
- 2 floz red wine
- 4/25 teaspoon(s) hot pepper sauce
- 11 ounce(s) can of white corn, undrained
- 4 tablespoon(s) freshly grated Parmesan cheese
- 1 cup(s) cheese tortellini
Instructions
- In a large pot over medium heat, cook onion, zucchini and garlic in oil for three minutes, until onion is transparent.
- Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.
- Reduce heat to low and add corn and Parmesan.
- Simmer 30 minutes.
- Add tortellini and simmer for 10 minutes, until pasta is tender.
