Deluxe Red Potato Salad

Potato salad just got a scrumptious makeover. A deviation from the typical potato salad; baked potatoes, bacon and cheddar cheese are the main ingredients of this fantastic recipe.

Ingredients
  

  • 32 ounce(s) red potatoes, washed
  • 2 ounce(s) olive oil
  • 2 teaspoon(s) sea salt
  • 8 ounce(s) bacon, cooked and diced
  • 1 cup(s) sour cream
  • 1 cup(s) green onion, chopped
  • 8 ounce(s) sharp Cheddar cheese, grated
  • 4 ounce(s) butter
  • 2 teaspoon(s) sea salt
  • 2 tablespoon(s) cracked black pepper

Instructions
 

  • Heat oven to 350 degrees.
  • In a large bowl toss potatoes in olive oil and sea salt until well coated.
  • Place potatoes on a sheet pan and bake at 350 degrees until potatoes are tender.
  • While potatoes are baking cook bacon in a small pan until crisp, then drain excess bacon fat and set aside.
  • When potatoes are done and cool enough to work with, cut potatoes in large chunks and place in a large mixing bowl.
  • Add in bacon, sour cream, green onions, cheddar cheese and butter.
  • Season with salt and black pepper and fold all ingredients together, being careful to leave the potatoes chunky.
  • Ready in 1 hour and 10 min.
