Deluxe Red Potato Salad
Potato salad just got a scrumptious makeover. A deviation from the typical potato salad; baked potatoes, bacon and cheddar cheese are the main ingredients of this fantastic recipe.
Ingredients
- 32 ounce(s) red potatoes, washed
- 2 ounce(s) olive oil
- 2 teaspoon(s) sea salt
- 8 ounce(s) bacon, cooked and diced
- 1 cup(s) sour cream
- 1 cup(s) green onion, chopped
- 8 ounce(s) sharp Cheddar cheese, grated
- 4 ounce(s) butter
- 2 teaspoon(s) sea salt
- 2 tablespoon(s) cracked black pepper
Instructions
- Heat oven to 350 degrees.
- In a large bowl toss potatoes in olive oil and sea salt until well coated.
- Place potatoes on a sheet pan and bake at 350 degrees until potatoes are tender.
- While potatoes are baking cook bacon in a small pan until crisp, then drain excess bacon fat and set aside.
- When potatoes are done and cool enough to work with, cut potatoes in large chunks and place in a large mixing bowl.
- Add in bacon, sour cream, green onions, cheddar cheese and butter.
- Season with salt and black pepper and fold all ingredients together, being careful to leave the potatoes chunky.
- Ready in 1 hour and 10 min.
