Crunchy Chicken in Pita
When you’re looking for a healthy alternative to those fried chicken sandwiches, this wholesome and healthy chicken pita is sure to come in handy. The almonds and apricots pack a palate-pleasing punch.
Ingredients
- 1/4 cup(s) whole almonds
 - 8 ounce(s) sliced, skinless chicken breasts, cooked with no salt
 - 1/4 cup(s) dried apricot quarters
 - 1 celery stalk, chopped
 - 1/2 cup(s) fat-free plain yogurt
 - 2 tablespoon(s) chopped fresh cilantro
 - 3 teaspoon(s) Dijon mustard
 - 33/100 tablespoon(s) orange zest
 - 33/100 tablespoon(s) honey
 - 2 whole-wheat pitas
 
Instructions
- 
Preheat oven to 350 degrees.
 - 
Place almonds on baking sheet for 7-8 minutes, or until roasted.
 - 
Cool.
 - 
In a bowl, mix almonds and remaining ingredients.
 - 
Spoon 1/2 cup chicken salad into each pita half.
 - 
Serve with mixed greens drizzled with oil and vinegar.
