Crepes a la Mexican

These crepes are more like decadent enchiladas than anything else. To top things off, you'll enjoy a creamy, dreamy cheese sauce that completes the Mexican crepes.

Ingredients
  

  • 16 ounce(s) Monterey Jack cheese
  • 4 cup(s) green Anaheim chili peppers
  • 340 19/100 grams ham (12 oz.), sliced
  • 12 flour tortillas
  • 1/2 cup(s) butter
  • 1/2 cup(s) all-purpose flour
  • 4 cup(s) milk
  • 3 cup(s) shredded cheddar cheese
  • 1 teaspoon(s) of dry mustard
  • 1/2 teaspoon(s) paprika

Instructions
 

  • Cut Monterey Jack cheese into 1/2 in.

  • Cut green chili peppers into 1/4 in.

  • Cut ham into thin strips.
  • Place a strip of cheese, a strip of chili pepper, and a strip of ham on flour tortillas; roll to enclose.
  • Place in a greased 13x9 in.

  • In a saucepan blend together butter and flour.
  • Stir in milk gradually.
  • Cook until thickened, stirring constantly.
  • Add grated cheddar cheese and dry mustard.
  • Cook until the cheese melts.
  • Pour over the tortillas and sprinkle with paprika.
  • Bake at 350 degrees for 45 minutes, or until bubbly.
