Coconut Curry Chicken

In this recipe curry combines with coconut milk and the result is crazy good. The delicious aroma alone of this chicken dish will have your mouth watering. One bite and your tastebuds will be captivated. Serve over hot jasmine rice.

Ingredients
  

  • 6 chicken breast fillets
  • 12 teaspoon(s) ghee
  • 6 teaspoon(s) ghee
  • 2 onions, chopped
  • 1 clove garlic, crushed
  • 4/25 tablespoon(s) lemon grass or 1 stem lemon grass, chopped finely
  • 1/4 teaspoon(s) red chili powder or 2 small red chilies, finely chopped
  • 1/4 teaspoon(s) cinnamon
  • 1/2 teaspoon(s) cardamom
  • 2 teaspoon(s) curry powder
  • 12 ounce(s) coconut milk

Instructions
 

  • Melt ghee in pan, add chicken, fry gently until golden brown and tender; drain, slice.
  • Serve topped with coconut curry sauce.
  • For sauce, melt ghee in pan, add onions, garlic and lemon grass, saute until onions are soft.
  • Add chilies, cinnamon, cardamom and curry.
  • Cook, stirring, about a minute.
  • Stir in coconut milk and simmer, uncovered 5 minutes.
  • Remove from heat, blend or process until smooth, strain and reheat.
  • Ready in 20 min.
