
Classy Stuffed Sweet Potatoes in Oven
These classy stuffed sweet potatoes, marinaded in orange juice, spell sweet relief for your side dish rut.
Ingredients
- 8 medium-sized sweet potatoes
 - 1/4 cup(s) orange juice
 - 3 tablespoon(s) butter, melted
 - 1/4 teaspoon(s) salt
 - 1/4 teaspoon(s) ground cinnamon
 - 1 teaspoon(s) brown sugar
 
Instructions
- 
Heat oven to 350 degrees.
 - 
Rinse and dry sweet potatoes well; place potatoes on a baking sheet and bake 55 to 60 minutes or until tender.
 - 
DON’T turn off oven.
 - 
Cool potatoes until easy to handle.
 - 
When potatoes are cool, cut potatoes in half lengthwise and with spoon scoop out pulp from 8 halves and put into large bowl.
 - 
Discard skins.
 - 
Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potatoes intact to make the shells.
 - 
With electric mixer, beat potato-pulp, orange juice, 2 tbsp butter, cinnamon and salt until smooth.
 - 
Place potato mixture back into the saved potato shells.
 - 
Sprinkle remaining 1 tbsp butter and the brown sugar over top of stuffed potatoes.
 - 
Bake 10 to 15 minutes until potatoes are heated.
 - 
Ready in 1 hour and 20 min.
