Chicken & Rice Rolls
Wrap up lunch or dinner with this quick and tasty Mexican-inspired meal. One bite and you'll be rolling up to the dinner table instead of the drive-thru the next time you get a craving for Mexican.
Ingredients
- 8 flour tortillas
- 2 cup(s) cooked and shredded chicken
- 2 tablespoon(s) (1 packet) taco seasoning mix
- 1/2 cup(s) water
- 2 cup(s) cooked rice
- 1 cup(s) (8 oz can) tomato sauce
- 1/2 cup(s) chopped tomato
- 1/4 cup(s) sliced green onion
Instructions
- In large skillet, heat chicken, seasoning mix and water; bring to boil; simmer uncovered for 8-10 minutes.
- Add cooked rice, tomato sauce, tomato and green onion; heat 5-6 minutes.
- Heat tortillas according to package directions.
- Place approximately 1/2 cup filling on each tortilla.
- Fold in sides and roll up to close.
- Serve immediately or cover to keep warm.
