Cheese & Carrot Dip
This healthy twist on a classic cheese dip goes great on crackers, chips, or crudites. Pair your sides to set the tone for your next dinner party - from casual to elegant.
Ingredients
- 1 1/2 cup(s) carrots, shredded
- 8 ounce(s) cream cheese, softened
- 2 cup(s) cheddar cheese, shredded
- 2 cloves garlic, minced
- 3 tablespoon(s) to 4 tbsp. fresh parsley, chopped
Instructions
- Press carrots between paper towels to remove excess moisture; set aside.
- Combine cream cheese and Cheddar cheese in a medium bowl; stir well.
- Add carrots and garlic; stir well.
- Cover and chill for 1 hour.
- Shape cheese mixture into a ball; roll in parsley.
- Wrap in wax paper and chill for at least 1 hour.
