  • 1/2 Leek, finely chopped
  • 1 carrot, finely diced
  • 1 onion cut into small dice
  • 1 minced potato, cut into small dice
  • 5 cloves of garlic, minced
  • 16 tablespoon(s) heavy cream
  • 2 cup(s) fish stock
  • 16 floz water
  • 236 29/50 mL dry white wine
  • 1 pat of butter
  • 83/500 tablespoon(s) cornstarch dissolved in a little water
  • 1/8 teaspoon(s) Marjoram
  • 1/8 teaspoon(s) cumin seed
  • 1/4 teaspoon(s) bay leaves (1 bay leaf)
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1/8 teaspoon(s) nutmeg
  • 1 teaspoon(s) hot pepper sauce

Instructions

 

  • Heat the butter in a skillet; saute’ the leeks, carrots, onion and garlic for 2 minutes.
  • Add the wine, cream, water and fish stock.
  • Add the potatoes, conch, and seasonings; simmer until the potatoes are cooked.
