
Cayman-Style Conch Chowder

Ingredients
- 2 cup(s) finely chopped conch
- 1/2 Leek, finely chopped
- 1 carrot, finely diced
- 1 onion cut into small dice
- 1 minced potato, cut into small dice
- 5 cloves of garlic, minced
- 16 tablespoon(s) heavy cream
- 2 cup(s) fish stock
- 16 floz water
- 236 29/50 mL dry white wine
- 1 pat of butter
- 83/500 tablespoon(s) cornstarch dissolved in a little water
- 1/8 teaspoon(s) Marjoram
- 1/8 teaspoon(s) cumin seed
- 1/4 teaspoon(s) bay leaves (1 bay leaf)
- 1 dash(es) salt
- 1 dash(es) pepper
- 1/8 teaspoon(s) nutmeg
- 1 teaspoon(s) hot pepper sauce
Instructions

Heat the butter in a skillet; saute’ the leeks, carrots, onion and garlic for 2 minutes.

Add the wine, cream, water and fish stock.

Add the potatoes, conch, and seasonings; simmer until the potatoes are cooked.
