
Best Lime Tarts
Bite-sized lime tarts may be small in stature, but they're big on flavor. One bite will transport you on a culinary trip to the Keys. Cue Jimmy Buffett!
Ingredients
- 1 cup(s) granulated sugar
- 1/4 cup(s) butter
- 3 eggs, beaten
- 1 egg yolk, beaten
- 1 cup(s) lime juice
- 2 lime rinds
- 1 tart shells, baked
- 1 slivered almonds, toasted
Instructions
- Cook sugar and butter in top of double boiler until sugar is dissolved.
- Slowly add a little of hot mixture to eggs, stirring quickly.
- Pour egg mixture back into hot mixture, stirring constantly.
- Add limejuice, stirring almost constantly until thickened.
- Add rind and chill.
- To serve, pour into tart shells and sprinkle almonds on top.
