Beef and Potato Soup

Ingredients
  

  • 3 1/2 cup(s) new potatoes, small dice (about 1 pound)
  • 32 ounce(s) sauteed filet mignon, small dice
  • 2 red bell peppers, roasted, small dice
  • 1 large leek, small dice
  • 3 333/1000 cup(s) corn (1 lb bag)
  • 12 cup(s) chicken stock
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper, to taste
  • 1/8 cup(s) olive oil
  • 1 cornstarch

Instructions
 

  • Parboil potatoes; cool and set aside.
  • Saute filet tips; drain and set aside.
  • Saute red peppers and leek in olive oil until tender.
  • Add corn and potatoes, then add chicken stock, cream, salt and pepper.
  • Bring to a boil; add cornstarch to thicken.
