Baked Smoked Sausages

Where there's smoked, there is this hearty sausage casserole. A colorful medley of potatoes, onions, and carrots, the dish requires little prep. Dinner doesn't get any easier than this.

Ingredients
  

  • 32 ounce(s) red potatoes cut in chunks
  • 1 medium onion cut in chunks
  • 16 ounce(s) fresh baby carrots
  • 16 ounce(s) smoked sausage, sliced
  • 1 olive or vegetable oil
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • In 9x13 casserole dish, toss together vegetables, sausage, and a sparing drizzle of oil.
  • Sprinkle generously with salt and pepper.
  • Cover and bake for approximately 1 hr.
  • or until potatoes are tender.
  • Adjust seasoning to taste and serve.
  • Ready in 1 hour.
