
Baked New Potatoes
Fresh thyme gives these potatoes a sweet and earthy taste, and balsamic vinegar and garlic add depth of flavor. These terrific taters will make a perfect addition to any steak meal.
Ingredients
- 2 teaspoon(s) olive oil
- 2 teaspoon(s) minced garlic
- 1 teaspoon(s) chopped fresh thyme
- 1/2 teaspoon(s) sea salt
- 1/4 teaspoon(s) pepper
- 32 ounce(s) small new potatoes, quartered
- 3 tablespoon(s) balsamic vinegar
- 1 vegetable cooking spray
Instructions
- Stir together first 5 ingredients in a large bowl or large zip-top plastic bag; add potatoes.
- Drizzle with 2 tbsp balsamic vinegar, and stir or shake well to coat.
- Arrange potatoes in an aluminum foil-lined jelly-roll pan coated with cooking spray.
- Bake, uncovered, at 450 degrees for 45 minutes or until potatoes are tender, stirring once.
- Drizzle with remaining 1 tbsp vinegar, and toss well.
- Serve immediately.
- Ready in 1 hour.
