Baked Cauliflower

Ready for some flower power? This baked cauliflower dish is infused with minced garlic and topped with Romano cheese. It’s a great-tasting side whether you’ve gone low-fat, low-carb or low-cal.

Ingredients

  

  • 1 large head cauliflower
  • 6 cloves garlic, minced
  • 1 lemon
  • 2 tablespoon(s) olive oil
  • 1 ground black pepper to taste
  • 2 ounce(s) romano cheese

Instructions

 

  • Preheat oven to 400 degrees.
  • Lightly spray shallow ovenproof casserole dish with cooking oil spray.
  • Cut cauliflower into florets and put in a single layer in the prepared casserole dish.
  • Sprinkle with the minced garlic.
  • Squeeze the juice of one lemon over the top of cauliflower.
  • Drizzle cauliflower with olive oil.
  • Sprinkle with pepper.
  • Place in the preheated oven, uncovered, for about 10-15 minutes or until the top is lightly browned.
  • Test with fork for desired doneness.
  • Remove and sprinkle generously with Romano cheese before serving.
