Baked Apples

A new twist on a 'core' fall favorite, this recipe will surely delight the apples of your eye. Perfectly simple and healthy, once the apples are cut this is a great recipe to get your little helpers off the couch and into the kitchen. The only question is whether the kids will have more fun making it or eating it.

Ingredients
  

  • 2 medium apples, cut in bite size pieces
  • 2 tablespoon(s) pitted whole dates
  • 1/4 teaspoon(s) ground cinnamon
  • 1/2 cup(s) apple cider
  • 1 tablespoon(s) raspberry preserves
  • 1/4 cup(s) low-fat granola

Instructions
 

  • In two 10 or 12-oz casseroles combine the apples and dates.
  • Sprinkle with cinnamon.
  • Pour the apple juice over apple mixture.
  • Bake, covered, in a 350 degrees oven for 20 to 25 minutes or until apples are crisp-tender.
  • Stir the spreadable fruit; spoon on top of apple mixture.
  • Sprinkle with granola.
  • Serve warm.
