Ingredients
  

  • 16 ounce(s) spaghetti
  • 1/3 cup(s) chunky peanut butter
  • 1/2 cup(s) hot vegetable stock
  • 1 teaspoon(s) soy sauce
  • 2 tablespoon(s) rice vinegar
  • 2 tablespoon(s) safflower seed oil
  • 1 clove garlic, minced
  • 1/2 teaspoon(s) dry red pepper, crushed
  • 2 cup(s) cherry tomatoes
  • 1 cup(s) broccoli

Instructions
 

  • Bring large pot of water to boil; cook pasta until al dente.
  • While pasta is cooking, steam broccoli florets.
  • In a mixing bowl, whisk together peanut butter and hot stock until smooth.
  • Stir in remaining dressing ingredients.
  • When pasta is done, drain well.
  • Pour sauce over pasta; toss to coat well.
  • Add broccoli and tomatoes; toss again.
