Cabbage Salad

This meal is called Curtido and is originally from El Salvador. It’s usually prepared with pickled cabbage, onions, carrots, and lemon juice or vinegar. If you’re looking for a salad that will help you get a “head” of the game, try this tasty one on for size.

Ingredients

  

  • 1 medium head cabbage, chopped
  • 2 small carrots, grated
  • 1 small onion, sliced
  • 1/2 teaspoon(s) dried red pepper
  • 1/2 teaspoon(s) oregano
  • 1 teaspoon(s) olive oil
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) brown sugar
  • 1/2 cup(s) vinegar
  • 4 ounce(s) water

Instructions

 

  • Blanch cabbage with boiling water for 1 minute.
  • Discard water.
  • Place cabbage in large bowl and add grated carrots, sliced onion, red pepper, oregano, olive oil, salt, brown sugar, vinegar, and water.
  • Place in refrigerator for at least 2 hours before serving.
