Bean Soup

This is what you’ve bean waiting for…a soup chock full of beans, veggies and flavor! The array of flavors will surely please your palette, and if you prefer something with a little kick, choose a spicy salsa to bring the heat.

Ingredients

  

  • 2 cup(s) red potatoes, diced
  • 2 cup(s) frozen green beans
  • 3 3/4 cup(s) canned black beans, drained
  • 3 3/4 cup(s) stewed tomatoes
  • 3 1/2 cup(s) vegetable broth
  • 2 cup(s) canned corn, drained
  • 2 cup(s) canned garbanzo beans, drained
  • 1 cup(s) salsa

Instructions

 

  • In a 6-quart crock-pot combine potatoes and frozen green beans; add black beans, undrained tomatoes, broth, corn, garbanzo beans and salsa.
  • Cover and cook on “low” heat setting for 9 to 11 hours or on “high” for 4 1/2 to 5 1/2 hours.
  • Serve with warmed tortillas or tortilla chips.
  • Ready in 4 – 11 hours.
