
Zucchini Quiche
This gourmet dish is a great way to work in your daily veggie intake with a proper portion of protein. You can dial up your veggie dose by going greens with spinach or diced tomatoes.
 
Ingredients
- 4 medium zucchini
 - 1 medium onion
 - 2 eggs
 - 4 egg whites
 - 333/1000 cup(s) vegetable oil
 - 1/2 teaspoon(s) oregano
 - 1/2 teaspoon(s) basil
 - 1/2 teaspoon(s) garlic powder
 - 1/4 cup(s) parsley flakes
 - 1 cup(s) pancake mix
 
Instructions
- 
Slice zucchini thin (do not peel).
 - 
Dice onion.
 - 
Add oregano, basil, garlic powder and parsley flakes; mix well.
 - 
Beat eggs until lemon colored.
 - 
Add oil.
 - 
Add pancake mix.
 - 
Mix with zucchini.
 - 
Put into 9-inch pie plate.
 - 
Bake at 350 degrees F for about 1 hour until brown.
