
Cucumber Sandwiches
Be as “cool as a cucumber” with this fresh dish. This veggie sandwich truly is light and refreshing. You’ll look at cucumbers in a whole new “lite” once you’ve sampled this gourmet gem.
Ingredients
- 2 thin slicing cucumbers, peeled, sliced paper thin
- 1/2 teaspoon(s) salt
- 2 tablespoon(s) herb or wine vinegar
- 1 cup(s) butter or margarine, softened
- 6 teaspoon(s) minced fresh tarragon
- 1/4 cup(s) minced fresh chervil
- 30 thin slices whole-wheat or homemade white bread slices
Instructions

Put cucumber slices into a bowl.

Toss with salt.

Sprinkle with vinegar.

Toss and allow to stand 1 hour.

Drain well in a colander.

Blend butter, tarragon and chervil together.

Lay out your slices of bread and butter 1 side of each bread slice.

Cover 15 slices with cucumbers, dividing evenly.

Close sandwiches and trim crusts.

Cut into rectangles with a sharp knife.
