Chili-Cheese Chicken

Ingredients

  

  • 1/2 cup(s) shredded Cheddar cheese
  • 1/4 cup(s) diced green bell pepper
  • 1/4 cup(s) diced red bell pepper
  • 1/4 cup(s) minced cilantro
  • 1/4 cup(s) diced tomato
  • 1/2 teaspoon(s) chili powder
  • 1/2 teaspoon(s) ground cumin
  • 1/8 teaspoon(s) salt
  • 4 skinless, boneless chicken breasts – pounded to 1/4 inch thickness (do this yourself or buy them cut this way)

Instructions

 

  • In a bowl, mix the shredded cheese, peppers, cilantro, and tomatoes.
  • Season with chili powder, cumin, and salt.
  • Cover one side of the chicken breasts with enough cheese mixture to coat.
  • Roll breasts over mixture, and secure with toothpicks.
  • Place the chicken breasts in a crock-pot.
  • Pour in the remaining cheese mixture.
  • Cover, and cook 3 hours on High.
  • For a more spicy dish, increase spices or add some red pepper flakes.
