
Chili-Cheese Chicken
This recipe puts a Mexican twist on traditional crockpot chicken. Enjoy this slow-cooked meal which bursts with flavor! It’s a great way to add a little spice to your life.
Ingredients
- 1/2 cup(s) shredded Cheddar cheese
- 1/4 cup(s) diced green bell pepper
- 1/4 cup(s) diced red bell pepper
- 1/4 cup(s) minced cilantro
- 1/4 cup(s) diced tomato
- 1/2 teaspoon(s) chili powder
- 1/2 teaspoon(s) ground cumin
- 1/8 teaspoon(s) salt
- 4 skinless, boneless chicken breasts – pounded to 1/4 inch thickness (do this yourself or buy them cut this way)
Instructions

In a bowl, mix the shredded cheese, peppers, cilantro, and tomatoes.

Season with chili powder, cumin, and salt.

Cover one side of the chicken breasts with enough cheese mixture to coat.

Roll breasts over mixture, and secure with toothpicks.

Place the chicken breasts in a crock-pot.

Pour in the remaining cheese mixture.

Cover, and cook 3 hours on High.

For a more spicy dish, increase spices or add some red pepper flakes.
