Plum Cake For 12

Visions of sugar plums will be dancing in your head when you taste this palate-pleasing cake. If you’re not a big fan of plums, simply substitute apricots for the same effect with a twist on the taste.

Ingredients

  

  • 2 cup(s) flour, sifted
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) baking powder
  • 2 teaspoon(s) sugar
  • 333/500 cup(s) butter
  • 2 egg yolks
  • 333/1000 cup(s) water
  • 1 Breadcrumbs
  • 1 Topping:
  • 2 pound(s) plums
  • 1 cup(s) sugar
  • 2 egg yolks
  • 2 tablespoon(s) sugar
  • 2 tablespoon(s) cream

Instructions

 

  • Sift dry ingredients for cake together.
  • Cut in butter and well mixed, make a well in the center; add egg yolks and water and mix well.
  • Turn out on a well-floured board and knead for a few minutes.
  • Place in refrigerator to chill for one hour before using.
  • When cold, roll dough into a thin sheet and cover bottom of 13 x 9 inch cake pan.
  • Sprinkle with breadcrumbs and dot generously with butter.
  • Mix the egg yolks, sugar and cream together and reserve.
  • Wash plums, cut into halves and remove stones.
  • Arrange fruit in rows on top of the breadcrumbs.
  • Sprinkle with 1 cup of sugar; pour cream mixture over the top.
  • Bake in 350 degrees oven for 45 minutes.
  • Ready 1 hour.
