Mediterranean Meatballs
Finding a recipe for Mediterranean meatballs that tops this one will be a real feta. Enjoy these bite-sized bits of beef as an appetizer or as a meal with a side of lemon rice.
Ingredients
- 1/2 cup(s) chopped parsley
- 1 teaspoon(s) dried oregano
- 2 tablespoon(s) finely chopped onion
- 16 ounce(s) ground beef
- 1/2 cup(s) crumbled feta cheese
- 113 grams pitted green olives, coarsely chopped (0.5 cup)
- 2 eggs
Instructions
-
Combine all the ingredients with your hands and shape into 16 meatballs.
-
Place the meatballs about 2-inches apart on a baking sheet and broil, about 3-inches away from the heat until browned on top.
-
Turn over and broil on the other side.
-
You don’t really need any salt in this recipe as the feta and olives provide enough.
-
You can also fry the meatballs in olive oil, but I think broiling is easier.
-
Ready in 1 hour.
