Chicken Stir-Fry

This chicken dinner is going to make quite a stir. Imagine a typical stir fry combined with a barbecue sauce and that’s what you get with this dish. It’s perfect for those nights when you’re short on both time and ingredients.

Ingredients

  

  • 10 ounce(s) couscous
  • 16 ounce(s) boneless, skinless chicken, cut into strips
  • 1 tablespoon(s) vegetable oil
  • 1 red pepper, cut into thin strips
  • 1 onion, sliced
  • 333/1000 cup(s) honey mustard
  • 2 667/1000 ounce(s) barbecue sauce

Instructions

 

  • Prepare couscous according to package directions.
  • Keep warm.
  • Heat oil in large nonstick skillet over “high” heat; stir-fry chicken for 5 minutes until well browned.
  • Transfer to bowl.
  • In the same skillet, stir-fry bell pepper and onion strips for 3 minutes until crisp-tender.
  • Return chicken to the skillet.
  • Stir in 2/3 cup of water, mustard and barbecue sauce.
  • Heat to boiling, stirring often.
  • Ready in 15 min.
