Sausage & Veggie Soup

This is a delectable and rich Italian soup. The main ingredients are sausage, carrots, and garbanzo beans for a nutritional bang.

Ingredients

  

  • 8 ounce(s) Italian pork sausage
  • 1 cup(s) sliced carrots
  • 1 large baking potato, peeled and cut into 1/2 cubes
  • 1 clove garlic
  • 2 (14 1/2 oz) cans beef broth
  • 1 (15 oz) can garbanzo beans
  • 1 203/250 cup(s) (1-14 1/2 oz can) pasta style chunky tomatoes, un-drained
  • 12 floz water
  • 1/2 teaspoon(s) dried Italian seasoning
  • 1 bay leaf
  • 1 cup(s) zucchini-julienne cut
  • 1 Grated fresh Parmesan cheese, as much as desired

Instructions

 

  • In a large skillet, brown sausage and drain.
  • Place into a crock-pot, and add all ingredients except zucchini.
  • Cover and cook on “low” for 7-9 hrs.
  • Remove bay leaf, and gently stir in zucchini.
  • Cover and cook 30 more minutes.
  • Serve with grated cheese.
  • Ready in 8 hours.
