
Sausage & Veggie Soup
This is a delectable and rich Italian soup. The main ingredients are sausage, carrots, and garbanzo beans for a nutritional bang.
Ingredients
- 8 ounce(s) Italian pork sausage
- 1 cup(s) sliced carrots
- 1 large baking potato, peeled and cut into 1/2 cubes
- 1 clove garlic
- 2 (14 1/2 oz) cans beef broth
- 1 (15 oz) can garbanzo beans
- 1 203/250 cup(s) (1-14 1/2 oz can) pasta style chunky tomatoes, un-drained
- 12 floz water
- 1/2 teaspoon(s) dried Italian seasoning
- 1 bay leaf
- 1 cup(s) zucchini-julienne cut
- 1 Grated fresh Parmesan cheese, as much as desired
Instructions

In a large skillet, brown sausage and drain.

Place into a crock-pot, and add all ingredients except zucchini.

Cover and cook on “low” for 7-9 hrs.

Remove bay leaf, and gently stir in zucchini.

Cover and cook 30 more minutes.

Serve with grated cheese.

Ready in 8 hours.
