Heart Healthy Vegetarian Couscous Crockpot

Baby lima beans and saffron are the key ingredients in this delicious veggie dish. It’s a vegetarian delight.

Ingredients

  

  • 1 small red onion, chopped
  • 2 teaspoon(s) jarrred minced garlic
  • 1 1/2 cup(s) soup, swanson, vegetable broth
  • 1 package (9 oz.) frozen baby lima beans
  • 1 cup(s) frozen, no-salt peas
  • 1/4 teaspoon(s) salt, table
  • 1/8 teaspoon(s) powdered saffron
  • 1/8 teaspoon(s) spices, pepper, red or cayenne
  • 1 cup(s) couscous
  • 1 medium tomato, chopped
  • 1/4 cup(s) chopped cilantro

Instructions

 

  • Spray a large saucepan or Dutch oven with vegetable oil.
  • Place over medium-high heat.
  • Add onion and garlic and cook until onion is tender, about 5 minutes.
  • Add broth, lima beans, peas, salt, saffron, and pepper.
  • Bring to a boil over high heat.
  • Reduce heat, cover and simmer 10 minutes, or until lima beans are tender.
  • Remove from heat and stir in uncooked couscous, tomato, and cilantro.
  • Cover and let stand 5 minutes.
  • Ready in 30 min.
