
Heart Healthy Vegetarian Couscous Crockpot
Baby lima beans and saffron are the key ingredients in this delicious veggie dish. It’s a vegetarian delight.
Ingredients
- 1 small red onion, chopped
- 2 teaspoon(s) jarrred minced garlic
- 1 1/2 cup(s) soup, swanson, vegetable broth
- 1 package (9 oz.) frozen baby lima beans
- 1 cup(s) frozen, no-salt peas
- 1/4 teaspoon(s) salt, table
- 1/8 teaspoon(s) powdered saffron
- 1/8 teaspoon(s) spices, pepper, red or cayenne
- 1 cup(s) couscous
- 1 medium tomato, chopped
- 1/4 cup(s) chopped cilantro
Instructions

Spray a large saucepan or Dutch oven with vegetable oil.

Place over medium-high heat.

Add onion and garlic and cook until onion is tender, about 5 minutes.

Add broth, lima beans, peas, salt, saffron, and pepper.

Bring to a boil over high heat.

Reduce heat, cover and simmer 10 minutes, or until lima beans are tender.

Remove from heat and stir in uncooked couscous, tomato, and cilantro.

Cover and let stand 5 minutes.

Ready in 30 min.
