Low Cholesterol Beef in Zucchini Grate

When it comes to choosing a vegetable, zucchini is such a versatile vegetable you can combine it with almost anything. This beefy dish makes the zucchini savory and flavorful.

Ingredients

  

  • 2 large zucchini
  • 1 large onions, chopped
  • 1 clove garlic, diced
  • 4 tomatoes, peeled and chopped
  • 1 green pepper, chopped
  • 10 ounce(s) ground sirloin
  • 1 1/2 ounce(s) breadcrumbs
  • 1 1/2 ounce(s) Parmesan cheese, shredded

Instructions

 

  • Simmer zucchini in boiling salted water about 12 minutes.
  • Cut lengthwise, scoop out pulp and chop.
  • Saut meat and onions until onions are translucent and meat is cooked through.
  • Drain.
  • Mix meat with zucchini, tomatoes, pepper, garlic, salt and pepper to taste.
  • Pile mixture into zucchini halves and place on baking sheet.
  • Top with breadcrumbs and grated cheese.
  • Bake in 375 degrees oven approximately 15 minutes.
  • Ready in 30 min.
