Low Sodium Rice

Plain rice is just that. Thankfully, this side dish couldn’t be further from the same old white rice. Infused with chicken broth, tomatoes and spices, it’s all dressed up with somewhere to go… like right into your stomach.

Ingredients

  

  • 2 tablespoon(s) olive oil
  • 1/2 cup(s) onion, chopped
  • 3/4 cup(s) rice
  • 3/4 teaspoon(s) cumin
  • 3/4 teaspoon(s) garlic powder
  • 1 1/2 cup(s) low sodium chicken broth
  • 1/2 cup(s) low sodium tomatoes, drained

Instructions

 

  • Heat the vegetable oil in a saucepan over medium heat.
  • Add the onion, and cook until tender, stirring frequently.
  • Stir in rice, and season with cumin and garlic powder.
  • Cook and stir until the rice is lightly toasted, about 5 minutes.
  • Pour in the chicken broth and the diced tomatoes.
  • Bring to a boil, then cover and cook over low heat for 15 to 20 minutes, until all of the liquid has been absorbed.
