
Nigerian Mango Salad
Redefine fruit salad with this tangy, mouthwatering mango medley that really brings home the flavor of the tropics. Sweet pineapple, tart orange juice and strawberries round out the flavor – and there’s a lot to go around.
Ingredients
- 2 mangos, cubed
- 1/2 pineapple, fresh, cubed
- 1/2 cup(s) lemon juice
- 1 cup(s) apricot nectar or orange juice
- 1 lettuce
- 1 strawberries, for garnish
Instructions

In a 2-quart bowl: Add the pineapple to the mango.

Blend the juices separately and then pour over the mango.

Serve on lettuce cups either individually or in a bowl.

Garnish with fresh strawberries.
