Ingredients

  

  • 1/2 cup(s) cracked wheat or bulgur wheat
  • 6 floz water
  • 8 tablespoon(s) chopped parsley
  • 4 tablespoon(s) chopped fresh mint
  • 1/4 cup(s) chopped scallions
  • 1 tomato, diced
  • 1 cucumber, peeled seeded and diced
  • 1 green pepper, diced
  • 1/2 head iceberg lettuce, shredded (1 shredded head romaine is ok too)
  • 1 tablespoon(s) salt
  • 3 tablespoon(s) lemon juice
  • 3 tablespoon(s) olive oil

Instructions

 

  • Soak cracked wheat in water for 1 hour or until tender.
  • Squeeze out excess water from wheat.
  • Add all vegetables and tomato.
  • Toss.
  • Mix salt, lemon and olive oil.
  • Add to salad.
  • Ready in 1 hour.
