Deluxe Salad

This bean salad is a quick fix side that brings together a mix of canned ingredients that you have on hand with some freshly chopped additions. You can substitute frozen beans for canned beans, but they should be cooked and cooled prior to incorporating them.

Ingredients

  

  • 2 cup(s) cut green beans
  • 2 cup(s) cut yellow beans
  • 2 cup(s) green lima beans
  • 2 cup(s) garbanzo or kidney beans
  • 1/2 cup(s) chopped green pepper
  • 1/2 cup(s) chopped onion
  • 1/2 cup(s) canned pimento, chopped
  • 1/2 cup(s) vegetable oil
  • 1/2 cup(s) wine or apple cider vinegar
  • 1/2 cup(s) granulated sugar
  • 1 tablespoon(s) salt
  • 1 teaspoon(s) pepper

Instructions

 

  • Drain all the beans.
  • Combine first 7 ingredients in large glass bowl.
  • Combine vegetable oil and remaining ingredients in jar; shake vigorously.
  • Pour dressing over bean mixture; toss well.
  • Cover; marinate overnight in refrigerator, stirring occasionally.
  • Serve as a meat accompaniment, relish or drain well and serve in lettuce cups as a salad.
