
25-Minute Macaroni and Cheese
One bite of this noodle dish and you’ll say cheese! Stick a feather in your cap and call it macaroni. Goes great with fried chicken.
Ingredients
- 2 cup(s) elbow macaroni
- 1 tablespoon(s) butter
- 2 cloves garlic, minced
- 1 pinch(es) cayenne pepper
- 1 tablespoon(s) all-purpose flour
- 1 cup(s) nonfat evaporated milk
- 1/4 teaspoon(s) salt
- 1 1/4 cup(s) shredded low fat cheddar cheese
Instructions

Cook macaroni in 3 quarts water until al dente, stirring occasionally (about 8-10 minutes).

Meanwhile, melt butter in a medium saucepan.

Add garlic and cayenne pepper.

Cook 1 minute over medium heat.

Add the flour, and cook 1 minute, stirring constantly.

Add the milk and salt; bring to a simmer, stirring frequently.

Simmer 2 minutes.

Reduce heat to low, and stir in 1-cup cheese.

Drain pasta and add it to the sauce.

Cook 1 minute.

Sprinkle with remaining 1/4-cup cheese before serving.
