Happy Goji Berry Pilaf

Ingredients

  

  • 1 cup(s) brown rice
  • 1 3/4 cup(s) vegetable broth
  • 1/2 cup(s) low-fat/lite coconut milk
  • 1 tablespoon(s) sesame oil
  • 3 teaspoon(s) Braggs Liquid Aminos
  • 1/4 cup(s) dried goji berries
  • 4 tablespoon(s) fresh cilantro, chopped
  • 1/4 cup(s) scallions, chopped
  • 1/4 cup(s) unsalted dry roasted peanuts

Instructions

 

  • Combine rice, broth, coconut milk, sesame oil, Bragg Liquid Aminos, and goji berries in a medium saucepan and bring to a boil.
  • Reduce heat and simmer on low until liquid is absorbed (35 to 45 minutes, depending on rice).
  • Let sit for 5 minutes.
  • Add cilantro, scallions, and peanuts.
  • Fluff and mix with a fork before serving.
  • You may use soy sauce in place of Bragg Liquid Aminos.
